Our vegan, gluten free holiday meal! I never got around to posting this.
Sweet potatoes, greens, sparkling cider, BBQ tofu, mashed potatoes, baked beans, corn on the cob with rosemary garlic buttery spread, walnuts, cranberry sauce, pudding, and salad. With a pumpkin for decoration.

Healthy hot cocoa! I mix approximately:
3 cups almond milk
2 tbs cocoa
2 tsp maca root
1 tb agave nectar
So basically maca root is amazing. It makes me feel energetic, alive, balanced, peaceful, sociable, happy, productive, and creative. I love it. I heard it will also get you laid and give you prettier hair and skin. The twist is that it tastes gross. Chocolate to the rescue! Chocolate, besides being always the right response, is the only flavor I’ve discovered to be strong enough to mask the flavor of maca. I add it to my almond milk, and the drink overall gives me more calcium and good fat, along with the benefits of the maca.
I always blend this drink. Our blender doesn’t do hot liquids, so I boil about 2.5 cups of the milk, and blend the rest cold with the other ingredients. I then mix. I try not to overdo it on the sugar, drinking a less sugary version sometimes. I’m gonna experiment with adding more super foods to the recipe so look for a future post putting a twist on this. What’s better than cupcakes? Brownie cupcakes! They’re brownies, but in adorable, convenient cupcake form.
This recipe is from a vegan gluten free baking book that Michelle got me. I love chocolate, and Michelle gets me chocolate for every anniversary, bday, or gift-giving event. This one calls for Bob’s Red Mill all-purpose gluten free baking flour.

Pumpkin soup. This delicious, creamy soup was Michelle’s idea. She baked the whole pumpkin in the oven for an hour, then cut it and scooped out the insides, and let the fleshy part boil with sautéed onions and garlic. Then, I helped her puree the mix in our blender. She added cumin, coriander, thyme, and a bit of sugar. Perfection. There’s something so homey and eventful about eating homemade soup, and about eating pumpkin.
Also, we roasted and ate the seeds, which were addicting!
